Our Mushrooms

Lion's Mane

(Hericium erinaceus)

Buttery and savory flavor. Tender, and crispy texture, like seared steak. But with a soft inside that melts in your mouth. Works well as beef, crab, or pulled pork alternative.

Pathfinder Oysters

(Pleurotus ostreatus)

Mild flavor, like tofu. Firm, with long fibers that pull easily, similar to scallops. Pairs best with saucy dishes where it can absorb and accentuate the flavor.

Pink Oysters

(Pleurotus ostreatus)

Distinctly savory with an underlying sweetness, like ham. Soft and crispy, like bacon when fried. Works well as a pork alternative.

Blue Oysters

(Pleurotus ostreatus)

Strong nutty flavor. Firm and crispy, similar to seafood. Works well on its own or in savory dishes like scrambled eggs & stir-fry.

Pearl Oyster

(Pleurotus ostreatus)

Rich and savory flavor. Soft and tender, similar to beef tenderloin in consistency. Works well on its own or in soups or stir fry.

Golden Oysters

(Pleurotus ostreatus)

Also called "yellow oysters" they are both flavorful and fragrant. We recommend them for fried dishes and as a meat replacement in various salads and cold dishes. ​

Pioppino mushrooms

(Cyclocybe aegerita)

Beautiful small capped mushrooms with a thin stem. Elevate your plate’s presentation with this delicate and savory mushroom. Works well fried with spinach, kale, bok choy or other leafy greens.

Maitake

(Grifola frondosa)

Rich and savory in flavor, it stands out even when simply sauteed in butter. It's edges brown to give it a delightful crispness that makes it a favorite for stir-fries.

Chestnut

(Pholiota adiposa)

Also called Cinnamon Cap mushrooms. Stunningly spotted caps with a spongey stem. Works well roasted or fried and adds a unique element to your plate.

Dried Mushrooms

(Pleurotus ostreatus)

Dehydrated and air-sealed mushrooms of your choice for long-term storage. Wonderful in soups and stews.

Fresh off the rack

Our mushrooms are grown and harvested locally at our mushroom farm in Wayne, New Jersey. They are distributed fresh to local restaurants, households, & at the Wayne Farmer's Market during the summer.

Organic & natural

Originally gourmet mushroom strains were discovered in the wild but have since been cloned and grown indoors. They uniquely grow on dead trees as opposed to soil and result in a superior flavor and texture compared to common mushrooms.

Ready to cook

We farm our mushrooms in environmentally controlled indoor grow-rooms and we handle them with gloves, masks, and lab-coats to keep them sterile.  They also grown on oak-shavings and soy -- no dirt involved! You can optionally give them a quick rinse but they’re ready-to-go straight into the frying pan.

Mushrooms are a nutritious and protein-rich meat alternative, packed with fiber and antioxidants. Gourmet mushrooms, in particular, have a decadent umami flavor profile and a tender meaty texture, making them an excellent meat or seafood substitute in dishes.
