Established by Michael and Marianna in early 2022, Under Oak Farm is a family-operated mushroom farm located in Wayne NJ. We grow a variety of gourmet mushrooms which can be found at the Wayne Farmer’s Market during the warmer months.

With more than 20 years in leading engineering projects in the construction industry and a master’s in Electrical Engineering, Michael is an ingenious problem solver and has a mind for planning and executing complex projects. A combined interest in mushrooms and vertical farming inspired him to start Under Oak Farms. He can be found experimenting with and maintaining our indoor farming systems. When Michael isn’t working on the farm, he can be found making high-carbon steel knives, creating leather goods, and tinkering in his workshop.
With experience working as a microbiologist in laboratories and a Master’s in Biology, Marianna operates the inoculation process and manages the laboratory at Under Oak Farm. Marianna has a curiosity for the natural world that intersects mycology and a fascination with the mysteries of the natural world. In her free time, Marianna can be found reading about mycology and discussing esoteric philosophy.
